Friday Night Wine Up is a 2022 Björnson Viola Auxerrois (pronounced "aus ser whah" and is a sibling of Chardonnay and is grown primarily in Alsace and Germany). Floral aromas, cut hay, stone fruit and some soft spice. Perfect amount of acidity and freshness. The grapes are from the Björnson Estate, 90% Claire’s block Auxerrois, 5% Claire’s block Chardonnay, and 5% Bieze Vineyard Pinot Blanc. They hand-pick and whole cluster press the fruit. The juice was cold settled for one day before being clean racked and inoculated. The fermentation took place in tank and the wine was aged in neutral French oak and acacia barrels for 3 months with occasional batonnage (stirring settled lees back into wine).
